Passas winery is a family business that operates in Stavrochori village, in the prefecture of Xanthi since 2016. On the slopes north of the Nestos valley, at the foot of the Rhodope mountain range and at an altitude of 130m. the vineyards of Passas winery spread out, quenching their thirst from the waters of the "Mavra Nera" spring.
The first vineyards were planted in 2007 and covers an area of 5 hectares. Initially, the cosmopolitan varieties Syrah and Sauvignon Blanc and the Greek Assyrtiko and Mavroudi were cultivated. In 2017, the Vidiano variety was added. Experimentation in the cultivation of Greek varieties continues uninterrupted to this day, in order to check their results on the soil and the microclimate of the region. Our goal is to highlight the potential of our region through the proper management of the terroir.
The soil in the vineyards is sandy at a depth of up to 30 cm from the surface and then clayey with scattered shale rocks up to a depth exceeding 110 cm, which helps on the one hand to better drainage and on the other hand to spreading the root system of the plants. The climate in the area is continental, with large temperature differences between summer and winter, but also large temperature fluctuations between day and night.
The name Passas that we chose for our winery has been in our family for three generations as it was the nickname of my grandfather. He camed with his family from Pontos and because he was the elder of the family, out of respect they called him Passas-Kiriakos.
