Our goal is to highlight the "hidden treasure" of this native variety in microclimates beyond its Cretan origin. Full bodied wine, medium to high acidity, distinct, complex aromas with aging potential and amazing development over time.
Fermentation: 100% stainless steel tank
Vinification: 10 hours pre-fermentation cryo-extraction, 8 weeks on lees
Maturation: With the fine lees for 15 weeks in oak barrels
Color: Yellow greenish
Aromas: Peach, apricot, with hints of aromatic herbs, minerality, honey, vanilla and cloves.
Tasting: Full bodied, with high alcohol balanced by moderate to high acidity, long complex aftertaste.
Pairing: Grilled fish and seafood, white meat and poultry with mild sauces, sauteed vegetables, cool green salads, aged cheeses

Originating from Thrace, the Mavroudi grape variety is believed to have produced the wine that intoxicated the Cyclops Polyphemus! This delicate grape yields rosé wines with pleasantly pronounced acidity, finesse, and subtle aromas of fresh red fruits.

Vinification: 12-hour pre-fermentation cryo-extraction
Maturation: Remains on fine lees with periodic stirring for 5 weeks
Color: Bright rosé, medium intensity with copper highlights
Aromas: Cherry, strawberry, cherry, with native hints of caramel and a light herbal touch
Tasting: Full-bodied with soft, discreet tannins, high alcohol balanced by vibrant acidity, and a long, complex aftertaste
Pairing: Mediterranean salads with feta cheese and sun-dried tomatoes, pasta with red sauce, mild white cheeses like mozzarella

Pairing: Meats with sweet and sour sauce, tarts, fresh and soft cheeses combined with homemade jams, sweets and fruits

A wine with medium to high acidity and complexity which combines the minerality and refreshing acidity of Asirtiko, the complex aromas and rich style of Vidiano and the aromatic freshness, liveliness and suppleness of Sauvignon Blanc.

Pairing: Grilled fish, chicken with cream, turkey pasta, sauteed vegetables, cool green salads, soft and goat cheeses
